Kofta Curry

Why make it

Tender spiced beef meatballs simmered in a smooth tomato and onion gravy. It is a family dinner staple that is easy to make ahead and tastes even better the next day.

You’ll need

  • 600 g minced beef (qeema), preferably with some fat
  • 1 small onion, finely grated for the koftas
  • 2 tbsp roasted chana (bhuna chana) powder or fine gram flou…
  • 1 tbsp ginger-garlic paste, for the koftas
  • 2 green chillies, finely chopped
  • 3 tbsp fresh coriander, finely chopped
  • 1 tsp garam masala powder
  • 1 tsp cumin seeds, dry roasted and coarsely crushed

Put the minced beef in a food processor and pulse for 20 to 30 seconds until fine and slightly sticky. If you have no processor, knead the mince by hand for 3 to 4 minutes.

Rest the mixture for 10 minutes, then wet your hands and shape into 18 to 20 walnut-sized balls. Smooth each ball so there are no cracks.

Blend the chopped tomatoes to a smooth purée and set aside. Whisk the yogurt until completely smooth so it does not split later.

Heat the oil in a wide pot over medium heat. Add the whole cumin and black cardamom, and let them sizzle for 20 seconds until fragrant.
