Vada Pav with Garlic Chutney

  • 10 fresh curry leaves
  • ¼ tsp asafoetida (hing)
  • 1 tbsp ginger, finely grated
  • 4 garlic cloves, finely grated
  • 3 green chillies, finely chopped

Heat 2 tbsp oil in a pan over medium heat. Add the mustard seeds and let them pop, then add the curry leaves and asafoetida and stir for 10 seconds.

Add the ginger, garlic and chopped green chillies and cook for 30 seconds until fragrant but not browned. Stir in 0.5 tsp turmeric.

Add the mashed potatoes, 1.5 tsp salt, coriander and lemon juice. Mix well, cook for 2 minutes, then cool for 10 minutes so it is easy to handle.

Divide the potato mixture into 6 equal portions and roll each into a smooth ball, then flatten slightly into a thick patty. If the mixture feels sticky, chill it for 10 minutes.

Cook’s tip

Cool the potato mixture before shaping; warm mash is soft and the vadas can break apart in the oil.
