Smash Burgers
Thin beef patties smashed onto a very hot pan for a lacy, crusted edge, stacked with cheese and pickles in a soft bun.
Ingredients
- 500 g beef mince (20% fat)
- 4 burger buns
- 4 cheese slices
- 1 tsp salt
- ½ tsp black pepper
- 1 small onion, very thinly sliced
- 8 pickle slices
- 4 tbsp burger sauce or mayo-ketchup mix
- 1 tbsp butter, for the buns
Instructions
- Divide the beef into 8 loose balls. Toast the buttered buns in the pan and set aside.
- Heat a cast-iron pan until very hot. Add 2 balls and smash flat with a sturdy spatula.
- Season, cook until deeply browned, flip, add cheese and cook 1 minute more.
- Stack two patties per bun with onion, pickles and sauce.
Tips
- Smash within the first 30 seconds; after that the patty won’t spread.
