Smash Burgers
Thin beef patties smashed onto a very hot pan for a lacy, crusted edge, stacked with cheese and pickles in a soft bun.
Ingredients
Equipment: Cast-iron pan, sturdy spatula
Method
Divide the beef into 8 loose balls. Toast the buttered buns in the pan and set aside.
Heat a cast-iron pan until very hot. Add 2 balls and smash flat with a sturdy spatula.
Season, cook until deeply browned, flip, add cheese and cook 1 minute more.
Stack two patties per bun with onion, pickles and sauce.
Cooking tips
- Smash within the first 30 seconds; after that the patty won’t spread.
Substitutions
- Beef → chicken mince, cooked through fully
Serve with
Fries or coleslaw.

Best fresh.
