Equipment: Heavy-based pan

Method

  1. Mix soy, pear, sugar, garlic, sesame oil and pepper. Add the beef and marinate.

  2. Heat a heavy pan until smoking. Sear the beef in batches in a single layer, 2–3 minutes per batch.

  3. Top with spring onions and sesame seeds.

Cooking tips

  • Freeze the beef for 30 minutes to make thin slicing easier.

Substitutions

  • Pear → 1 tbsp honey

Serve with

Steamed rice, lettuce leaves for wrapping and kimchi.

Storage

Cooked: 3 days. Raw and marinated: up to 24 hours in the fridge.

Reheating

Quick toss in a hot pan.
