Equipment: Tawa or flat frying pan, rolling pin

Method

  1. Beat the eggs with everything except the oil until frothy.

  2. Heat oil in a 20 cm (8 in) frying pan over medium heat.

  3. Pour in the eggs and swirl. Cook until the edges set.

  4. Flip or fold, cook 1 more minute and serve.

Cooking tips

  • Chop the vegetables small so they cook in the short time the eggs take.

Substitutions

  • Green chili → a pinch of black pepper for less heat

Serve with

Paratha or toast, with ketchup or green chutney.

Storage

Best eaten fresh.

Reheating

Microwave for 20–30 seconds if needed.
