These are the equivalents most recipes are written with. Volumes use the US cup of 240 ml, which is what most online recipes mean by “1 cup”.

Not all cups are the same size
- US cup: 240 ml in recipes (236.6 ml exactly). Most American and online recipes use this.
- Metric cup: 250 ml, used in Australia, New Zealand, Canada and South Africa.
- UK and South Asian recipes usually give grams and millilitres; where a cup is mentioned, a 240–250 ml mug is close enough for anything except baking.
- Tablespoons: 15 ml almost everywhere, but an Australian tablespoon is 20 ml (4 teaspoons).
The difference between a 240 ml and a 250 ml cup is about 4%. That doesn’t matter in a curry, but in a cake it can, so weigh flour and sugar when you can.
Fluid ounces and ounces are different things
A fluid ounce measures volume (about 30 ml). An ounce measures weight (about 28 g). They only line up for water and liquids of similar density. A cup of flour is 8 fl oz by volume but weighs only about 4.4 oz.
