Fan ovens: why 20 degrees lower
A fan (convection) oven blows hot air around the food, so it cooks faster than a conventional oven at the same setting. The usual rule is to set it about 20 °C (25 °F) lower than the recipe says, or keep the temperature and start checking 5–10 minutes early. If your recipe already gives a fan temperature, don’t reduce it again.
How to convert by hand
- °C to °F: multiply by 9, divide by 5, add 32. 180 °C × 9 ÷ 5 + 32 = 356 °F, which recipes round to 350 °F.
- °F to °C: subtract 32, multiply by 5, divide by 9. (400 °F − 32) × 5 ÷ 9 ≈ 204 °C, rounded to 200 °C.
Recipes round to the nearest familiar setting, so 180 °C, 350 °F and gas mark 4 are treated as the same oven even though they aren’t exactly equal.
Is your oven telling the truth?
Many home ovens run 10–20 degrees hotter or cooler than the dial. An inexpensive oven thermometer on the middle shelf will tell you. If cakes keep browning before they’re cooked through, your oven probably runs hot.
