
Gajar ka Halwa
Grated red carrots cooked slowly in milk, then fried in ghee with sugar and cardamom. Winter in a bowl.

Method
Simmer carrots, milk and cardamom in a wide pan, stirring often, until the milk is fully absorbed.
Add sugar; it will turn wet again. Cook until dry.
Add ghee and stir-fry until glossy and the edges look caramelised.
Fold in the khoya if using, and top with nuts.
Cooking tips
- A wide pan evaporates the milk faster.
Substitutions
- Khoya → 3 tbsp milk powder
Serve with
Warm, with a scoop of vanilla ice cream.
Storage
Fridge up to 5 days.

Microwave in 30-second bursts, stirring between.
